improve: Clearing Applications list (#4451)

* Less radical removal of apps

* Moving some applications to Selfhosted category

* Some more chess-boxing

* Document section is too small

* TG forks are too niche

* Floorp should be good

* feat: Add new multimedia tools and update existing application entries in applications.json
